Daily Rapid Food Safety Testing – Part of the Control Activities at Hiepphatfood Catering
In food services, food safety is not controlled only through procedures and records, but also needs to be verified through concrete actions carried out every day.
Rapid testing activities are conducted daily at site kitchens as part of Hiepphatfood Catering’s internal control program.
At Hiepphatfood Catering, rapid food safety testing is maintained regularly as part of our internal control program. This is a routine activity, combined with random sampling at operating kitchens, aimed at early detection of potential risks and adding another layer of control throughout meal service.
Testing may include several indicators related to potential chemical hazards in raw materials, such as borax, formaldehyde, or urea, depending on food categories and the level of risk being monitored.
Control Through Daily Practical Actions
This activity is carried out daily by the System Maintenance & Implementation Department, in coordination with suppliers and customer representatives through a cross-check monitoring mechanism at site kitchens. It is not a stand-alone inspection activity, but rather a control practice maintained from multiple parties to strengthen prevention.
The program is currently under the professional responsibility of Mr. Nguyen Tran Huu Hieu, Head of System Maintenance & Implementation, who oversees its deployment across the system. With many years of experience in food services and operational management, Mr. Hieu and his team continue to promote an approach based on on-site verification, documented evidence, and timely corrective action when needed.


Each sample is recorded, test results are retained, and on-site images are documented for traceability when required. These seemingly small actions contribute to operational discipline and strengthen confidence in the system.
We do not view rapid testing as a replacement for existing food safety control programs, but rather as an additional verification step, working alongside incoming material control, supplier assessment, food sample retention, and process monitoring during preparation.
